A few stages of fat rendering: the cooled leaf lard on the right (porcelain white). That batch we rendered with water in the pan. On the left is another batch with the
cracklin's in the strainer. We rendered the second batch without water in the pan in an attempt to make the cracklin's crispier. The cracklins were not that great and the lard was more flavorful (which is bad in this case). But it is still really good. We made some really nice crepes with a little bit of it.
